Dried tomatoes are a treasure. In the middle of winter with few flavorful vegetables available, dried tomatoes add so much to soups and sauces. Just last week I made a pot of chili beans that tasted so bland and uninspired. I added dry tomato and it gave that chili and extra punch. Our big question tends to be: Why didn't we make more when the tomatoes were fresh?
